A medium-size Georgia peach contains only 38 calories, fewer than comparable-sized apples or pears. Is that not wonderful? This exciting meatloaf will thrill you with a subtle hint of peaches throughout your loaf. Another meatloaf option from your friends at foodcreate.com. Enjoy!
1 pound ground beef
1 egg
1/2 cup milk
1/4 cup chopped onion
1 cup soft bread crumbs
1 teaspoon salt
1 pinch pepper
2 med sized GA peaches, peeled, pitted & sliced
1 tablespoon vinegar
1 tablespoon ketchup
1/4 cup brown sugar
1. Preheat the oven to 350*F (175*C).
2. In a medium bowl, mix together the ground beef, egg, milk, onion, bread crumbs, salt and pepper.
3. Press into a 9 inch pie pan like a crust. Prick meat all over using a fork.
4. Bake for 25 to 30 minutes in the preheated oven.
5. Remove from the oven, and pour off any excess fat.
6. Arrange the sliced peaches over the beef.
7. Mix together the vinegar, ketchup and brown sugar, and spoon over the top of the peaches.
8. Bake for an additional 20 minutes. Let stand for at least 10 minutes before serving.
Makes 1 outstanding meatloaf delight.
