Tenderloin Meatloaf

This economical and hearty ground beef recipe adds another dimension to your traditional meatloaf. Great cuts of meat are used to bring extra flavor and density to this family favorite. The added mushrooms are a nice touch. Mix all the ingredients by hand and watch as you create a spectacular family meal. Be sure to plan for leftovers!  

   

1 1/4 pounds ground beef tenderloin (with trimmings), sirloin or chuck

 

3 ounces ground pork

 

1/4 onion, chopped

 

1 clove garlic, finely chopped

 

1 tablespoon chopped fresh basil

 

1 tablespoon chopped fresh oregano

 

1 tablespoon chopped fresh parsley

 

1/2 cup fresh bread crumbs

 

1 egg, beaten

 

1/2 teaspoon kosher salt

 

1/4 teaspoon freshly ground black pepper

 

1 cup ketchup, divided

 

4 ounces cremini mushrooms, sliced

 

 

1. preheat oven to 350 degrees.

 

2. In a mixing bowl, combine the beef, pork, onion, garlic, basil, oregano, parsley, bread crumbs, egg, salt and pepper and 2/3 cup ketchup.

 

3. Mix well. Fold in the mushrooms.pat into an 8-by-4 inch loaf pan, rounding slightly.

 

4. Brush the remaining ketchup over the top. Bake for 40 minutes.

 

Makes 4 servings.
