Cheese Blintzes (Passover)

Filling

1-1/2 cups dry cottage cheese

2 eggs, lightly beaten

1 teaspoon unsalted butter, melted

1 teaspoon sugar

Salt to taste

Crepes

3 eggs

2/3 cup matza cake meal

1/2 teaspoon salt

1. Make filling: In medium bowl mix cottage cheese with beaten eggs, melted butter, sugar, and salt; set aside.

2. Make crepes: Beat 2 eggs with 1- 1/2 cups water in alarge bowl. Stir in cake meal and salt until smooth and well blended.

3. Grease and heat a small skillet. Pour a small amount of batter into skillet and swirl pan to coat. Cook on both sides until golden. Repeat until all batter is used.

4. Dividing equally, spoon filling onto each blintz and roll up.

5. Either cook filled blintzes in a little melted butter in a hot skillet, or bake at 350 degrees about 20 minutes, until heated through.

Makes about 2 dozen
