Hot Turkey Sandwiches MontereyHot Turkey Sandwiches Monterey

Makes 6 Servings

4 tablespoons margarine or butter (1/2 stick)

1 large onion

1/4 cup all-purpose flour

1/4 teaspoon ground red pepper (cayenne)

2 cups milk

6 ounces Monterey Jack cheese, shredded (1 1/2 cups)

half of 14-inch-long loaf Italian bread, cut into 1/2-inch-thick slices

8 ounces roast turkey, thinly sliced

2 medium tomatoes, sliced

1. In 2-quart saucepan, melt 3 tablespoons margarine or butter over medium heat. Add onion and cook until tender, stirring occasionally. With slotted spoon, transfer onion to small bowl.

2. Add remaining 1 tablespoon margarine or butter to saucepan. Stir in flour and ground red pepper. Cook over medium heat 1 minute. Gradually stir in milk; cook until slightly thickened and smooth, stirring constantly. Remove saucepan from heat. Stir in Monterey Jack, stirring until cheese melts.

3. Preheat oven to 350*F. Arrange Italian-bread slices on cookie sheet; toast in oven until lightly browned on both sides, about 10 minutes.

4. In 11" by 7" glass baking dish, arrange toast slices in single layer; spoon a small amount of cheese sauce over toast; top with turkey and tomato slices, remaining sauce, then onion. Cover baking dish with foil; bake 30 minutes or until mixture is hot and bubbly.
