A classic steak recipe for the big event! Serve a sirloin cut of beef with class and style. Reward your friends and family with a dinner to remember. Honor your heritage, honor St. Patrick and be thankful for blessings accumulated throughout the year. Éirinn go Brách!
1 (8-to-12-ounce) sirloin steak, room temperature
1 tablespoon butter or lard
1 teaspoon olive oil
1/4 cup Irish Whiskey
1 cup heavy cream
Salt to taste
1. Season steak with pepper.
2. Add butter and oil to a hot pan.
3. When butter is foaming, add steak so the fat maintains the heat and seals the meat quickly.
4. Reduce heat and cook to taste (3 to 4 minutes rare, 4 to 5 minutes medium, 5 to 6 minutes well done), turning steak only once.
5. Remove steak to a warm plate.
6. Pour off fat from pan, discard.
7. Add whiskey and cream to pan, stir until thickened.
Season to taste and pour over steak.
Makes 1 serving.
