A healthy alternative on Thanksgiving Day! This turkey salad recipe is simple and packed with wonderful flavor. In less than 20 minutes you can create an exciting and satisfying turkey salad that will be remembered all year round.
6 cup (8 ounces) baby spinach
8 ounces Butterball® Oven Roasted Turkey Breast, cut into strips
1 cup sliced strawberries
1 cup blueberries
1 can (8 ounces) pineapple chunks in juice, drained
1/4 cup canola oil
1/4 cup frozen orange juice concentrate, thawed
2 tablespoons spicy brown mustard
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1. For salad, place spinach in large bowl or on large platter.
2. Top with turkey, strawberries, blueberries and pineapple chunks.
For salad dressing, whisk oil, orange juice concentrate, mustard, salt and pepper in small bowl until well blended.
Gently toss dressing with salad.
Makes 10 servings.
