Spiced Pumpkin Seeds

Pumpkin seeds mixed with sugar, curry, ginger and cayenne pepper are the absolute best! What a great way to enjoy a fantastic Halloween season.

 

1 cup raw pumpkin seeds

 

1 tablespoon vegetable oil

 

1 tablespoon granulated sugar

 

1/2 teaspoon curry powder

 

1/8 teaspoon ground cumin

 

1/2 teaspoon cayenne pepper

 

1/8 teaspoon ground ginger

 

 

1. Preheat oven to 300*F.

 

2. Rinse seeds well and get as much of the pumpkin pulp off of them as possible (some of the small pieces may adhere.)

 

3. Pat dry with paper towels.

 

4. Toss seeds with oil, sugar, curry powder, cumin, cayenne and ginger.

 

5. Spread the coated seeds in a shallow baking sheet, turning from time to time, for about 45 to 60 minutes, or until nicely browned and crunchy.

 

Makes 4 servings.
