St.Patrick’s Day Colcannon

Traditional Irish potato recipe that combines the hearty potato with the intensely nutritious kale. Kale is one of the healthiest vegetables on Earth. Kale is a descendent of the wild cabbage and had been a significant crop during ancient Roman times and a popular vegetable eaten by peasants in the Middle Ages. It is packed with at least 45 flavonoids that serve to detox the body and provide numerous anti-inflammatory benefits. Have a Happy St.Patrick’s Day and enjoy!

 

1kg (2 lbs) potatoes, freshly cooked and mashed

 

250g ( 1/2 lb) kale, just cooked, drained and finely chopped, or bunch of scallions, (spring onions) finely chopped

 

Milk, butter, salt and black pepper 

 

1.Mix potatoes and kale/scallions together.

 

2.Heat some milk with a generous knob of butter.

 

3. Beat it into the potato mixture until smooth and creamy.

 

Season well.
