Sloppy Joes are a great, all around quick meal that are always a family favorite. This sloppy joe recipe uses a healthier alternative in ground turkey.

 

Turkey Sloppy JoesTurkey Sloppy Joes

 

Makes 4 Servings

 

2 tablespoons vegetable oil

 

1 medium green pepper, chopped

 

1 pound ground turkey

 

1 can (15 ounces) tomato sauce

 

1/4 cup cider vinegar

 

3 tablespoons light brown sugar

 

1 tablespoon Worcestershire sauce

 

1 jumbo onion (about 1 pound)

 

4 Kaiser rolls, cut in half

 

4 green-leaf lettuce leaves

 

 

1. In nonstick 12-inch skillet, heat 1 tablespoon vegetable oil over medium-high heat until hot.

 

2. Add green pepper and cook until tender and golden.

 

3. Stir in ground turkey. Cook turkey over high heat until pan juices evaporate and turkey is browned.

 

4. Stir in tomato sauce, cider vinegar, brown sugar, Worcestershire sauce, and 1/4 cup water, heat to boiling. Reduce heat to low; cover and simmer 15 minutes to blend flavors.  

 

5. Meanwhile, cut onion into 1/2-inch-thick slices. In 10-inch skillet, heat remaining 1 tablespoon vegetable oil over high heat; cook 4 center slices of onion until golden and tender; wrap and refrigerate remaining onion slice for use another day.

 

6. To serve, on each Kaiser roll, arrange 1 lettuce leaf, some turkey mixture, and cooked onion slice.
