This Mexican beverage recipe is highly refreshing and terribly easy to concoct. A hot, sweltering summer day would be perfect to break out this recipe as you entertain your family and friends on the terrace!
2/3 cup cold water
2 tbsp. cornstarch
1/4 cup sugar
1 tsp. vanilla extract
1 cup fruit puree of choice, such as soursop, cherimoya, mamey, guava, or passion fruit
1 cup whole milk
1. Combine water and cornstarch and stir well.
2. Heat mixture in medium-size saucepan over low-medium heat while stirring continuously, preferably using small whisk.
3. Stir in sugar, vanilla, and fruit puree until well blended; then add milk, still stirring until atole is frothy.
Makes 2 servings.
