Beef Salad Provencale (French Food Recipes)

3 cups cooked beef roast, cut into thin strips*


3 cups cooked rice, cooled


1 1/2 cups sliced celery


1 cup sliced green onions


1/2 cup mayonnaise


1/2 cup sour cream


1/2 teaspoon seasoned pepper


1 teaspoon prepared horseradish


1 teaspoon Dijon mustard


1 teaspoon salt


2 large tomatoes, cut into eighths

 

 

1. Combine roast beef, rice, celery and onions.

 

2. Blend mayonnaise, sour cream, pepper, horseradish, mustard and salt.

 

3. Stir into rice mixture; chill.

 

4. Garnish with tomato wedges and cucumber slices, if desired.

 

*Or use cooked ham or pork.

 

Makes 6 servings.
