A chorizo recipe from Spain that is incredibly easy to create and even better to enjoy. Simone Ortega was the foremost authority on traditional Spanish cooking. 14 ounces (400g) semi-cured cooking chorizo
4 cups (1 litre/1 3/4 pints) dry red or white wine
1. Slice the chorizo unto 3/4-inch (2-cm) slices.
2. heat a heavy-base pan and add the chorizo.
3. Cover with the wine, bring to a boil, then lower the heat and let cook until nearly all the wine has evaporated.
4. Serve hot, spearing each slice with a cocktail stick (toothpick).
