A healthy, tasty, heart-warming recipe from the Greek Islands! Cod Fillets with Greek Salad This is easy to prepare and the ingredients are inexpensive to purchase.

Cod Fillets with Greek Salad

Makes 6 Servings

1-1/2 cups tomatoes, chopped

8 pitted kalamata olives, quartered

2 tablespoons feta cheese with basil and oregano, crumbled

1-1/2 tablespoons fresh oregano, minced

1 tablespoons capers, drained

3 (7.6-ounce) boxes frozen grilled cod fillets

1. To make salsa:

Combine the first five (5) ingredients in a bowl; mix gently but mix well. Cover and refrigerate for 30 minutes.

2. Arrange cod fillets on a lightly greased baking sheet; bake at 400F for 18 to 19 minutes.

3. Top with Greek Salsa.
