Spain will play Germany at 2:30 p.m. ET at Moses Mabhida Stadium in Durban, South Africa in a highly anticipated semifinal World Cup match. Leading 2010 World Cup scorer David Villa will lead the potent Spain attack against a rising German squad bent on returning to the finals in Johannesburg. This classic pork and tomato recipe is characteristic of the type of fare served in tapas bars in the Herrera del Duque Province. Good luck Spain!
2 medium tomatoes, chopped
1/2 medium Vidalia onion, thinly sliced
1/4 cup/50 ml extra virgin olive oil
2 tablespoons/30 ml red wine vinegar
1 clove garlic, minced
1/4 teaspoon/1 ml dried oregano
Kosher or sea salt
Freshly ground pepper
2 pork tenderloins (about 3/4 pound /375 g each), cut crosswise into 1/2-inch/1 cm strips
1. Gently stir together the tomatoes, onion, vinegar, garlic, oregano, and salt and pepper to taste in a medium bowl. Let stand at room temperature while you prepare the pork.
2. Grease a ridged grill pan and heat over high heat until very last.
3. Grill the pork slices, in batches if necessary, for 3-4 minutes, turning once, until browned on both sides and just cooked.
4. Arrange the pork slices on a serving pattern and spoon tomato salad over them.
