Eton Mess (Wimbledon Strawberry Recipe)

Eton Mess is an all-time classic British dessert and an Eton Mess recipe must be included in any list of strawberry recipes. The dish was traditionally served at Eton College. Wimbledon is acknowledge to be the premier tennis tournament in the world and the priority of The All England Lawn Tennis Club, which hosts The Championships. Strawberries and cream are an important part of the whole Wimbledon experience.

 

10.6 fl oz/ 300 ml whipping cream

 

1 tablespoon fine sugar

 

3.5 oz/100g ready-made meringue

 

1 lb/ 450g fresh strawberries

 

1 tablespoon confectioners/icing sugar

 

 

1. Place the whipping cream in a large mixing bowl, add the sugar and whip with an electric mixture until the cream is light and fluffy. Do not over whip; the success of the dish requires softly whipped cream.

 

2. Break the meringue into large bite-size chucks and gently stir into the cream. Don't worry if some of the meringue crumbles add this too.

 

3. Place half of the strawberries into another large mixing bowl and press gently with the back of a fork to break up the strawberries slightly and release some of the juice. Stir gently into the cream.

 

4. Halve, then quarter the remaining strawberries.

 

5. Place the cream mixture into a 7" trifle or glass serving dish, top with the strawberry pieces, chill for 30 minutes in the refrigerator and sprinkle with the confectioners/icing sugar before serving. Alternately serve in individual size dessert bowl or glasses.

you know, I've never had Eaton Mess. For some reason I thought it involved a sponge cake of sorts... I'm not well versed in English traditional cuisine :(

I was so into tennis as a teen. I happily remember waking up early on weekends to watch the Wimbledon finals on TV. And yes, I sometimes did so, while noshing on a bowl of strawberries with whipped cream. ;)
