Galway city has a reputation amongst Irish cities for being
associated with the Irish language, music, song and dancing traditions. This hearty and soothing recipe harkens back to the traditional Irish soda bread of old.
Galway Irish Soda Bread
Makes 4 to 6 Servings
1 lb plain-whole meal (all purpose whole wheat) flour
2 tsp bicarbonate soda (baking soda)
1 2/3 cups buttermilk
1 tsp salt
1. Preheat the oven to 400*F. Place the flour in a large bowl and stir in the bicarbonate of soda and salt. Make a well in the center.
2. Gradually pour the buttermilk into the well, beating in the flour from around the edges to form a soft, not sticky dough.
3. Turn the dough out onto a lightly floured surface and knead for 5 minutes until smooth. Shape into a 8 inch round and place on a lightly greased baking sheet.
4. Using a sharp knife, cut a deep cross on the top of the dough and bake for 30-35 minutes, or until slightly risen and cooked through. Cool slightly on a wire rack before serving.
