What a delicious and cost effective way to use the potatoes in your pantry!

2 pounds red or white creamer potatoes

3 medium cloves garlic

1 tablespoon fresh rosemary leaves

3 tablespoons extra virgin olive oil

Salt

Freshly ground black pepper

1. Preheat the oven to 425*F on convection heat or 450*F on regular bake.

2. Scrub the potatoes and pat then with a cloth towel to dry them as much as possible.

3. Place the potatoes in a baking pan large enough to accommodate them snugly in a single layer (some overlap is fine).

4. Lightly crush and peel the garlic cloves and add them to them to the potatoes with the rosemary and olive oil.

5. Season generally with salt and pepper. Stir to coat the potatoes with the olive oil.

6. Bake until the potatoes are tender and have formed a nice brown crust, 40 to 45 minutes. Check on the potatoes periodically but it is not necessary to turn them.Serve hot.

If you are busy, you can prepare the potatoes a few hours ahead of time, set aside @ room temperature, and reheat them in the oven for about 10 minutes when ready to serve.
