Fufu consists of cassava, yam, or plantain that has been cooked,
mashed, and shaped into a ball. Fufu is a much-loved staple throughout West Africa. Fufu can be topped with a fiery sauce or served as the bland accompaniment to a main dish.
Yam Fufu Balls
2 pounds yams
1/4 teaspoon black pepper
1 teaspoon butter
1. Place yams in cold, unsalted water. Boil and cook about 25 minutes, or until yams are soft.
2. Remove yams, cool, peel, then mash with the other ingredients. Place in food processor to remove lumps. Do not puree.
3. Put mixture in a bowl. Beat with wooden spoon or wire whisk until completely smooth. The fufu should have a sticky, slightly resilient consistency. Shape into balls and serve warm.
