Lamb is wonderfully nutritious and filled with abundant flavor. This greek lamb and potatoes recipe is a great recipe for any special occasion!

 

Greek Lamb and PotatoesGreek Lamb and Potatoes

 

1 leg of lamb 5 to 6 lbs.

 

10 to 12 medium potatoes

 

Salt & Pepper

 

1 head of garlic

 

1 lemon

 

Water

 

 

1. Wash the lamb well before preparing. With a sharp kitchen knife make a dozen or so slits all over the leg of lamb. Place a clove of garlic deep inside of each.

 

2. Rub the lamb down with the lemon and then generously sprinkle the pepper on the lamb making sure to get the bottom as well.

 

3. Cover the entire leg with salt, to the point where there is not one part of the lamb that does not have salt on it (the salt will help keep the moisture in and will slide off with the grease of the lamb as it cooks, so do not worry that it will taste overly salty).

 

4. Place the lamb in a large roasting pan with enough water to cover about ¼ of the lamb.

 

5. Peel and quarter about 12 medium sized potatoes and place them all around the lamb. Bake in a preheated 350*F oven for 1 1/2 hours.

 

Serves 8.
