Lamb is very healthy and contains very few calories. This lamb recipe blends wonderful walnuts and allspice to create extremely distinctive flavors!

 

Spiced LambSpiced Lamb

 

2 cloves garlic, crushed and finely chopped

 

1 tablespoon ground cinnamon

 

1/2 teaspoon ground allspice

 

4 'trim' lamb loin or leg chops (small)

 

1 tablespoon olive oil

 

1/2 punnet cherry tomatoes, cut in half

 

75g walnuts

 

 

1. Mix together the garlic, cinnamon and allspice.

 

2. Rub the spices into the lamb chops, massaging into the meat as you do so.

 

3. Heat a frying pan over a high heat. Pour in the olive oil and add the lamb. Cook on one side for 2-3 minutes and then turn.

 

4. Add the cherry tomatoes and walnuts and continue cooking, for another 2-3 minutes.

 

5. Squash the tomatoes gently as they cook, to release the juices. Serve immediately.

 

6. Serve with a large side salad or steamed vegetables.
