This Asian flavored one-dish recipe is great for a busy workday or for a leisurely weekend treat! Simple and extremely economical.
1-1/4 pounds ground beef
2 packages (3 ounces each) Oriental-flavored instant ramen noodles, broken up
2 cups water
2 cups frozen vegetable mixture, such as broccoli, carrots, red peppers, water chestnuts
1/4 teaspoon ground ginger
2 tablespoons thinly sliced green onion
1. In large nonstick skillet, brown ground beef over medium heat for 8 to 10 minutes or until beef is no longer pink, breaking up into 3/4-inch crumbles.
2. Remove with slotted spoon; pour off drippings. Season beef with one seasoning packet from noodles; set aside.
3. In same skillet, combine water, vegetables, noodles, ginger and remaining seasoning packet.
4. Bring to a boil; reduce heat. Cover, simmer 3 minutes or until noodles are tender, stirring occasionally.
5. Return beef to skillet; heat through. Stir in green onion before serving.
Makes 4 servings.
Recipe Tips:
To lower fat content, use a colander to rinse cooked ground beef in hot tap water before adding the seasoning packet.
