Beef and broccoli go together very well in this simple, yet awesomely flavored one-dish meal!
1 lb. beef top round steak, cut 3/4-inch thick
3 tablespoons butter, divided
2 cloves garlic, crushed
1/4 tsp. salt
1/8 tsp. pepper
1 package beef-flavored rice mix (6.8 oz.)
1/2 cups onion, chopped
2-1/2 cups water
2 cups frozen broccoli and red pepper mixture, defrosted
1. Trim fat from beef steak. Cut steak lengthwise in half and then crosswise into 1/8-inch thick strips.
2. Heat 1 tablespoon butter in large nonstick skillet over medium-heat until hot.
3. Add beef and garlic (1/2 at a time) and stir-fry 1 to 2 minutes or until outside surface of beef is no longer pink. (Do not overcook.)
4. In same skillet, cook and stir rice mix, onion and remaining 2 tablespoons butter over medium heat until rice mix is golden brown.
5. Stir in water and contents of seasoning packet; bring to a boil. Reduce heat to low; cover tightly and simmer 15 minutes.
6. Stir in vegetables; continue to cook 3 to 5 minutes or until liquid is absorbed and rice is tender.
7. Return beef to skillet; heat through.
Makes 4 servings.
Recipe Tips:
For preparation ease, partially freeze steak, then cut into strips.
An electric frying pan works well for this recipe.
Make this dish ahead of time, refrigerate and reheat in the microwave.
