I love a recipe with few ingredients but loaded with flavor and style. This wonderful rice recipe certainly fits the bill. 5 simple ingredients blend together to form the base for many other recipes. This sushi rice can be used in so many different ways. Top with your choice of steamed vegetables. Make a plate of thinly sliced vegetables or fish and transport your friends and family all the way to the Orient.
2 cups short-grained Japanese-style rice
2 1/4 cups water
1 tablespoon rice wine vinegar
1/4 teaspoon salt
1 teaspoon sugar
1. Wash rice well in a few changes of cold water.
2. Drain rice well, place in a heavy-bottomed pot and cover with 2 1/2 cups water.
3. Cover the pot with a tight-fitting lid, bring to a boil, and and reduce immediately to low heat.
4. Cook the rice for 15 minutes.
5. Turn off the heat, and let the rice sit for another 10 minutes.
7. Mix together the rice wine vinegar, salt, and sugar. Stir until the sugar is dissolved.
8. When the rice is cooked, turn it out into a bowl, and pour the seasoning mixture over the rice.
9. Gently stir with a wooden paddle, using a cutting action, until the rice is evenly coated.
Let the rice cool before using.
Makes 4 cups.
