What a wonderful twist to Asparagus! This asparagus recipe is healthy, economical, and sure to make any summertime meal outstanding. Enjoy!
2 bunches asparagus, woody ends removed
1 bag ready washed baby rocket lettuce leaves
16 grape tomatoes halved lengthways
100g thinly sliced prosciutto
1/2 cup freshly shaved Parmesan cheese
2 tablespoons extra virgin olive oil
Cracked black pepper
1. Pre heat the grill and grill the prosciutto until crispy. Drain on kitchen paper to absorb any excess oil.
2. Grill the asparagus for 4-5 minutes, turning frequently to prevent charring.
3. In a large bowl toss together the baby rocket, halved grape tomatoes and asparagus in the extra virgin olive oil.
4. Season with cracked black pepper.
Top the salad with crispy prosciutto and shaved Parmesan and serve immediately.
