Banana Celery Salad

This banana and celery salad provides plenty of fiber, while being low in saturated fat and sodium. Believe it or not, Angel Castro, Father of Fidel Castro, was a banana plantation owner. When young, Fidel tended the bananas on his father’s 10,000 acre estate. Perhaps they served this exciting salad recipe at the Castro family table? One can never know. Serve it at your table and take advantage of an exotic and beautiful salad recipe that is sure to provide and please. 

 

5 bananas, thinly sliced


3 sticks celery, thinly sliced


1 large green capsicum, thinly sliced*


1/2 Spanish onion, thinly sliced


150g shelled pistachios, roughly chopped

 

Dressing

 

1 tablespoon lemon juice


1/4 cup light mayonnaise

 

 

1. Combine dressing ingredients and set aside.

 

2. In a large mixing bowl combine sliced banana, celery, capsicum and Spanish onion.

 

3. Spoon dressing over salad, sprinkle with chopped pistachios and season with salt and pepper.

 

For a lower fat recipe nuts are optional.

 

*Capsicum refers to a wide variety of tropical pepper plants with the genus of the same name. Common names for these plants are cayenne, cayenne pepper, chili pepper, paprika, peppers, pimiento, red pepper, sweet pepper, aji dulce, Hungarian pepper, and Mexican pepper.

 

Makes 6 servings.
