This refreshing salad recipe is a healthy and economical alternative on any given day. The walnuts or pecans add a nice crunchy aspect to the salad. Serve with your favorite dressing. 

 

Cranberry SaladCranberry Salad

 

2 cups whole raw cranberries

 

2 oranges, peel removed

 

1 cup sugar

 

1 cup chopped walnuts or pecans

 

1 (3.5-ounce) package pineapple-flavored gelatin

 

1-1/2 cups pineapple juice

 

 

1. In a food processor, grind cranberries and oranges until chopped finely.

 

2. Dissolve gelatin in half of the pineapple juice which has been heated.

 

3. Add rest of juice, sugar, nuts and ground fruit.

 

4. Pour into gelatin molds and refrigerate until stiff.

Can a sugar substitute used in place of the sugar?

The only sugar substitute I know of that can be used instead of sugar is "Splenda". A few other products have come out, but I do not know about baking with them yet. I am also interested as we have a few friends that are diabetic so I must be careful and thoughful when inviting them to dinner. Should I learn about anything more, I'll be happy to share the information with all!
