Peachy Chicken Salad

This light, soft salad recipe is perfect for the time strapped cook. It is easy to make and extremely tasty, elegant and perfect for anyone seeking healthy meal alternatives in life. Add your favorite salad dressing and be prepared for a taste explosion!

 

1 cup chopped Georgia Pecans

 

1/2 cup mayonnaise

 

1/4 cup Sweet Onion, minced

 

2 tablespoons fresh Basil, chopped

 

1/2 teaspoon Salt

 

1/2 teaspoon freshly ground Pepper

 

4 cups cooked Chicken Breast, chopped

 

4 Georgia Peaches, peeled and diced

 

Garnishes: fresh Basil sprigs and fresh Blackberries

 

 

1. Preheat oven to 350*F.

 

2. Toast pecans on a baking sheet for 5-7 minutes, until lightly toasted and fragrant.

 

3. Stir together mayonnaise and next 4 ingredients in a large bowl.

 

4. Fold in pecans, chicken and peaches. Cover and chill for 2 hours.
