Strawberry Salad
1 pint fresh strawberries, sliced lengthwise
3 tablespoons hazelnut oil
3/4 cup chestnuts, peeled and thinly sliced
1 tablespoon raspberry vinegar
Salt & pepper freshly ground
3 or 4 shallots, minced
2 small navel oranges, peeled, sliced crosswise and cut in half
1 quart small spinach leaves, stemmed and torn
1 quart garden lettuce, cut in narrow strips
1. Blanch the water chestnuts for 2 minutes in boiling water and immediately refresh in cold water.
2. Combine with greens and shallots.
3. Add oil and toss.
4. Add vinegar, salt and pepper.
5. Add fruit and gently toss again.
