The Best Basic Potato Salad‏

Potato salad is an all time classic potato recipe. It can be served with any meal and really accentuates any meat or vegetable choice. Really easy to make and wonderfully economical. Always have a batch on hand!

 

3 pounds russet potatoes, peeled and cut into 1" chunks

 

Salt & ground black pepper to taste

 

1/3 cup light or regular sour cream

 

1/3 cup gluten-free mayonnaise

 

1/4 cup mixed chopped herbs such as parsley, basil and thyme

 

2 tablespoons lemon juice

 

2 ribs celery, chopped

 

1/2 small onion, chopped

 

 

1. Put potatoes into a pot, cover with 1" salted water and bring to a boil. reduce heat and simmer for 8-10 minutes.

 

2. Be careful not to overcook. Test for doneness by inserting a fork info a potato chunk. It should slide easily without breaking apart the potato. Immediately drain well and let cool for 10 minutes.

 

3. Gently toss potatoes with sour cream, mayonnaise, herbs, lemon juice, celery, onion, salt and pepper.

 

Cover and chill before serving.

Whoa, the best, huh? That's pretty big bragging rights since there are so many good potato salads out there. This one does look pretty dang good, though. ;)
