Tuna, Avocado & Walnut Salad

 

Enjoying a salad a day can help increase your energy level, fill you up and provide essential vitamins and minerals!

 

 

1/2 cup walnut halves

 

 

2 tablespoons olive oil

 

2 cloves garlic, finely sliced

 

1 1/2 tablespoons balsamic vinegar

 

1 teaspoon finely grated orange rind

 

100g rocket lettuce leaves

 

2 avocadoes, diced or sliced

 

1 orange, peeled and sliced

 

425g can Tuna Chunks in Spring water, drained

 

1/4 cup fresh basil leaves, roughly torn

 

crusty bread, for serving

 

 

1. Toast walnut halves in a frying pan for 5 minutes, or until golden. Allow to cool slightly and roughly chop.

 

2.Add oil to pan and cook garlic until tender. Remove from heat and whisk in balsamic and orange rind.

 

3. Assemble rocket, avocado, orange, Tuna and walnuts on serving plates.

 

4. Drizzle over dressing and sprinkle with freshly ground black pepper and basil leaves.

 

5. Serve with crusty bread.
