In biblical times, the standard worker's lunch appears to have
been bread with onions. This was a staple in my house when I was growing up. This sandwich is best prepared a day before eating.
Honey-Onion Sandwiches
2 large mild onions, sliced
1 cup water
1/4 cup honey
1 cup mayonnaise
1 1/2 teaspoons sharp prepared mustard
whole wheat bread
1 cup parsley, chopped
salt and pepper to taste
1. Place the onions in a bowl. In a small saucepan, bring the water and honey to a boil and pour over the onions.
2. To make the onions crisp, store them in the refrigerator with a layer of ice on top.
3. When ready to use, drain and pat dry. Mix the mayonnaise and mustard, spread on slices of whole wheat bread, and top with onions.
4. Sprinkle chopped parsley over the onions. Salt and pepper to taste.
5. Serve with smoked almonds.
