Delicious Homemade Mayonnaise

Why buy store bought mayonnaise when you can so easily make your own? Here is a very easy, quick recipe that I have used myself. 

Delicious Homemade Mayonnaise

Makes 16 Servings

2 large egg yolks

1 teaspoon Dijon mustard

juice of 1/2 lemon

1 cup olive or canola oil, room temperature

coarse salt and freshly ground black pepper to taste 

1. In a bowl, whisk together yolks, mustard and lemon juice. 

2. In a very slow, steady stream, whisk in oil, drop by drop, until mixture begins to thicken.

3. As it thickens, add oil slightly more quickly, whisking constantly.

4. Season with salt and pepper. Store in refrigerator up to 2 days.
