This easy and simple roasted garlic recipe has uses in a variety of food dishes. It can be stored and used later if you happen to run out of time. You can multiply this recipe to make as much as you need. Each garlic head will yield about one heaping tablespoon of puree. A great way to serve roasted garlic cloves is as an accompaniment to bread.
1 medium bulb of garlic
2 tablespoons extra virgin olive oil
Kosher salt
Fresh ground white pepper
1. Preheat oven to 375*F.
2. Cut about one-third off the top of an unpeeled garlic bulb, exposing cloves.
3. Place the bulb on a sheet of heavy foil into an oven safe ramekin large enough to hold the bulb.
4. Pour the oil over the bulb, sprinkle with salt and pepper.
5. Wrap in the foil and bake 45 - 50 minutes or until the cloves are soft when squeezed. Let cool.
6. Squeeze the garlic cloves from the papery skin.
Store the leftover garlic in an airtight container for another use in the refrigerator for up to 2 weeks.
