Shallots Vinaigrette

This dressing recipe spotlights the unique and multifaceted shallot. Crusaders from Asia are thought to have introduced the shallot to Europe. A dressing perfect for a cool and refreshing summer salad!

 

2 tablespoons French red vinegar

 

2 tablespoons finely chopped fresh shallots

 

1/2 teaspoon salt

 

1/4 teaspoon pepper

 

2 teaspoons Dijon style mustard

 

6 tablespoons olive oil

 

1 tablespoon lemon juice

 

1 tablespoon heavy cream



1. Using a blender, add first 5 ingredients and, with blender running, add oil.

 

2. Continue blending.

 

3. Add in lemon juice and then the cream or yogurt.
