This exquisite swordfish steak recipe has only 4 ingredients! It is easy on the wallet and easy on your time. The olive oil blends with the Italian seasoning to form a wonderful menagerie of flavors. This is a great workweek recipe because it takes so little time bake in the oven. Enjoy with a glass of white wine and a side order of carrots or asparagus.
Two 6-ounce swordfish steaks, each 3/4 inch thick
Salt and pepper
About 1/4 cup extra-virgin olive oil
A few tablespoons dried Italian seasoning
1. Preheat the oven to 400*F.
2. Season the fish on both sides with salt and pepper.
3. Choose an oven proof baking dish just large enough tom hold both pieces of fish comfortably without their sides touching.
4. Pour enough olive oil into the dish to coat the bottom completely and sprinkle the seasoning over the bottom.
5. Lay the fish in the dish and brush the tops with more olive oil.
6. Bake for 4 minutes, then turn the fish over and continue to bake until done, 4 to 6 minutes.
