Sweet potatoes aren't just for holidays. Serve these glazed sweet potatoes with a roast instead of mashed potatoes.
3 medium sweet potatoes
2 tablespoon butter or margarine
3 tablespoons honey
Grated peel from 1 orange
2 tablespoons fresh orange juice
1. Pare sweet potatoes and thinly slice them.
2. Melt margarine in a large, non-stick skillet.
3. Add sweet potatoes; cover and cook over medium heat about 8-10 minutes or just until tender, turning often.
4. Combine honey, orange peel and juice; pour over sweet potatoes and continue to cook, tossing until sweet potatoes are thoroughly glazed with the mixture.
