Salsify is a vegetable whose root and leaves can be used for Salsify cooking purposes. It is also known as white salsify, goats beard, vegetable oyster, and the oyster plant. It is cultivated in Central and Southern Europe, the United States, and in Asia (Taiwan), and is said to have originated in the Mediterranean. Its root is similar in appearance to a thin parsnip.

Using salsify as a cooking ingredient is also a wise and healthy decision because it is  highly nutritious root vegetable. A 2/3-cup of salsify, which is approximately 90 grams, contains only 60 calories. Additionally, salsify contains no cholesterol or fat and is low in sodium. It also provides an excellent source of dietary fiber. The following recipe is a Southern staple and classic!

Salsify

1 bunch of salsify

juice of lemon

3 tablespoons butter

1 tablespoon chopped parsley

1 teaspoon chopped chives

1. Warm and scrape the salsify.

2. Place at once into cold water with their lemon juice.

3. Bring a pot of salted water to a boil while cutting the salsify into 1-inch rounds.

4. Cook the salsify in the boiling water until tender.

5. Drain and return to the pan with the butter and additional salt and pepper to taste.

6. Heat through, toss with the herbs, and serve.
