Southern Made Peanut Brittle

Steen's 100% Pure Cane Syrup is a unique Southern tradition. From the sugar cane fields of south Louisiana comes a great tasting peanut brittle recipe that is as good as anything you have ever tasted. This candy and peanut brittle recipe is quite easy to make. 6 ingredients combine to create a wonderful year round treat. Make a batch for family and friends but save some for yourself!

 

1 cup sugar


1/2 cup Steen's Southern Made Syrup


1 teaspoon vanilla


1 cup roasted, salted peanuts


1 teaspoon butter


1 teaspoon baking soda

 

 

1. In a 1 1/2 quart casserole dish stir together the sugar and syrup and microwave on high for 4 minutes.

 

2. Next, stir in peanuts, and microwave on high for approximately 4 minutes (until light brown).

 

3. Add butter and vanilla to syrup, blending well.

 

4. Microwave 1 to 2 minutes more. Peanuts will be light brown and syrup will be very hot.

 

5. Add baking soda and gently stir until light and foamy. Pour mixture onto lightly greased cookie sheet. Let cool for a half hour (at least).

 

When cool, break into small pieces and store in air-tight container.
