Avocado and Lime Dip‏

In Brazil they add avocados to ice cream. This avocado dip recipe pairs the royal avocado with the tanginess of lime.

 

2 large, ripe avocados

 

2 tablespoons freshly squeezed lime juice

 

2 teaspoons prepared horseradish

 

1 scallion (white and green parts), minced

 

1 garlic clove, minced

 

1/2 teaspoon salt

 

 

1. In a medium bowl, mash the avocados with a fork.

 

2. Add the line juice, horseradish, scallion, garlic, and salt, and mix well.

 

3. Taste and add more lime juice or horseradish if desired.

 

Serve at room temperature.

 

Makes approx. 1 cup.
