Applesauce can be used for so many recipes. Cinnamon and lemon juice blend together to make an outstanding side dish.
3 pounds Granny Smith apples, cored, pared, and chopped
1/2 cup water
2 cinnamon sticks (2 inches each)
1/2 teaspoon lemon juice
3 tablespoons firmly packed light brown sugar
1. In a 4-quart saucepan combine all ingredients except sugar; bring to a boil.
2. Reduce heat to low, cover, and let simmer, stirring occasionally, until apples soften, about 10 minutes.
3. Stir in sugar and cook for about 5 minutes longer.
4. Remove and discard cinnamon sticks.
Makes 1 quart.
May be served warm or chilled.
Note:
Applesauce will be slightly chunky. For a smooth applesauce, puree mixture in work bowl of food processor or blender container.
