Rice and coconut milk are quite the combination. This rice recipe calls for only 6 ingredients but do not be deceived. The flavor of the rice overwhelms and sharpens your senses all at the same time. The fresh lime adds a contrasting flavor and really balances this wonderful side dish.
1 cup jasmine rice
1 cup unsweetened coconut milk, well shaken
2 teaspoons grated fresh lime peel
1 tablespoon fresh lime juice
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1. Combine all of the ingredients with 1 1/2 cups water in a medium saucepan over high heat.
2. Cover and bring to a boil.
3. Reduce the heat to low and simmer for 20 minutes, or until all of the liquid is absorbed.
Makes 6 servings.
