Microwave Green Beans Amandine

This simple green beans recipe utilizes the power of your everyday microwave. Be adventurous and add a dash of nutmeg. At one time, nutmeg was one of the most valuable spices. It has been said that in England, several hundred years ago, a few nutmeg nuts could be sold for enough money to enable financial independence for life.

 

1/4 cup slivered almonds

 

1/4 cup butter or margarine

 

1 pound fresh green beans, cut into 1 1/2 inches

 

1/4 cup water

 

1/2 teaspoon salt

 

Dash ground nutmeg, optional

 

 

1. Combine almonds and butter in a 2-cup glass measuring cup.

 

2. Cook at 70 percent power for 1-2 minutes, or until almonds are lightly browned, reserve.

 

3. Combine beans and water in a 1-quart casserole.

 

4. Cook, covered with lid at 70 percent power for 4-6 minutes, or until beans are tender, stir once.

 

5. Add remaining ingredients, almonds and butter.

 

6. Let stand, covered, three minutes before servings.
