Roasted Potatoes with Chives and Parmesan‏

A potato recipe that is easy to make, hearty to eat, and full of distinct flavor. Only 6 ingredients combine to turn an ordinary potato into a world class side dish. Add a tab of butter and be prepared to be blown away!

 

2 pounds red-skinned potatoes, cut into large chunks

 

2 tablespoons olive oil

 

1 teaspoon salt

 

1/4 teaspoon freshly ground black pepper

 

2 tablespoons chopped fresh chives

 

3 tablespoons freshly grated Parmesan cheese

 

 

1. Preheat the oven to 400*F.

 

2. Toss the potatoes with the oil, salt, and pepper on a sheet pan or in a large gratin dish.

 

3. Roast until browned and tender, tossing the potatoes occasionally with a spatula, about 45 minutes to 1 hour.

 

4. Transfer the hot potatoes to a serving bowl, and toss with with the chives and Parmesan cheese.

 

Serve immediately.

 

Makes 4 to 6 servings.
