McCalister Newcombe of Chelsea, United Kingdom submitted this easy and economical rice recipe for all to share. Mr. Newcombe has travelled the Orient extensively and always has enjoyed this nutrient packed coconut rice meal. You may add any seafood of your choice on top or devour simply plain.
2 tablespoons Canola Oil
1 cup shredded unsweetened Coconut
1 cup uncooked long grain White Rice
3/4 cup Coconut Milk
1/2 teaspoon salt
1. Heat oil in medium pot over medium heat.
2. Add coconut and toast, stirring occasionally, until golden brown, about 2 minutes.
3. Add rice and toss to coat with coconut.
4. Stir in coconut milk, 1 cup water and salt.
5. Bring to a boil, reduce heat to low, stir once, cover and cook simmer for 15 minutes.
6. Remove from heat and allow to sit, covered, for 5 minutes.
Fluff with a fork before serving.
