Sweet Potato Souffle

Dae Thompson of Marietta, Georgia submitted this recipe Sweet Potato Souffle Casserole which was published in her local paper in 2005. The orange liqueurs are Grand Marnier, Beauchamp or Cointreau.Ā  Dae substitutes orange juice in place of the alcohol because it is more economical and some of her friends prefer not to have anything made with alcohol.

3-5 sweet potatoes, enough for 3 cups mashed

dash fresh ground cinnamon

dash fresh ground nutmeg

3/4 cup dark brown sugar

1/4 cup unsalted butter

2 large eggs, separated, have whites at room temp.

1 tsp. vanilla extract

1/2 cup evaporated milk

1/4 tsp. salt

1/4 cup orange liqueur or orange juice

1/4 cup chopped pecans, optional

1/4 cup raisins, optionalĀ 

Topping:

1/2 cup chopped pecans

1/2 cup brown sugar

1/3 cup unsalted butter or margarine, melted

dash cinnamon

dash nutmegĀ 

1. Preheat over to 450F. Scrub and dry the potatoes. Prick potatoes and bake on a foil lined baking sheet in middle of oven until very soft, about 1 1/2 hours.

5. Stir in nuts and/or raisins, if desired. Gently fold in egg whites.

6. 7. Cover with foil and bake at 350 degrees for 25-30 minutes. Remove foil and bake 15 minutes more.
