St. Valentine’s Day Bewitching Cocoa Bites

Show your loved ones real love by making a batch of handmade cocoa bites! Such a recipe is always appreciated around this time of year. These cocoa bites are so easy to make and only call for 6 ingredients. Cocoa bites are a fantastic way to show how much you really care. Enjoy and Happy Valentine's Day!

 

5 cups crisp rice cereal

 

6 tablespoons butter or margarine

 

3 cups miniature marshmallows or 30 large marshmallows

 

1 2/3 cups (10oz) Peanut butter chips

 

1/3 cup cocoa

 

1/3 cup light corn syrup

 

 

1. Measure cereal; set aside.

 

2. In a large saucepan over low heat, melt butter.

 

3. Add marshmallows, peanut butter chips and cocoa. Cook over low heat, stirring constantly, until marshmallows and chips are melted. Remove from heat.

 

4. Stir in corn syrup. Add cereal; stir until well coated.

 

5. Using hands, shape into 1 1/2 inch balls, stirring mixture a few times during shaping.

 

6. Place on a cookie sheet. Cool completely. Decorate as desired.

 

Store Cocoa Bites in a cool dry place.

 

Makes about 40 treats.

A few tips I'd like to add, line your cookie sheets with parchment paper, this will make it easier to lift the bites. Dust with a variety of goodies such as powdered sugar, cocoa powder, jimmies, coconut flakes, chopped peanuts, what every you have on hand.
To give as a treat, cut circles out of colored plastic wrap, place a bite in the center and twist closed or tie with a narrow ribbon. Big and little kids will love 'em!
