Turkey for roasting (your choice of size)
2 to 3 large oranges
One bag fresh cranberries
Pulp free orange juice for basting and injecting
Meat injector
Ground sage
Ground thyme
Ground nutmeg
Course salt
Ground black pepper
Butter (for rubbing the skin)
1. Preheat the oven according to the size of the turkey that you are cooking, many will have the instructions included. Be sure to completely wash your turkey and always remember to remove the packet of giblets!
2. Go ahead and put together the mixture for stuffing the turkey. Simply cut the cranberries in half and place in a large bowl. Then cut your oranges into quarters and place in the bowl. Take your spices, 1/2 teaspoon of each, and place in the bowl as well. Simply stir and then you are ready to stuff this mixture inside the turkey.
3. After you stuff the mixture into the turkey cavity, it is a good idea to take some cooking string to close it up. This will help to keep any of the seasonings and stuffing from falling out into the pan.
4. Begin the preparations on the turkey by patting dry after washing. You can then take and inject the bird with orange juice, making sure to hit a wide area for equal distribution of juices.
5. Take the butter and begin to rub and massage it all over the outside of the turkey all over the skin. This will help to create a wonderful brown crispness to the skin. After rubbing the butter on the outside, sprinkle generously with salt and pepper and you are ready for the oven!
