Louella P.  of Grantsburg, WI. loves to use up turkey leftovers The Day After Thanksgiving Casserole with this time tested recipe. The pimentos add great flavor and color.

The Day After Thanksgiving Casserole

3 cups cooked rice

3 cups green beans, frozen

2 ounces sliced pimentos, drained

1 onion, chopped

1 green bell pepper, chopped

2 cups cooked turkey, diced

1 cup cream of mushroom soup

1/2 cup milk

1. Preheat oven to 350*F. 

2. In a large baking dish, combine rice, green beans, pimentos, onion, and green bell pepper; mix well. Sprinkle turkey over rice mixture in casserole. Mix soup with water and pour over all.

3. Bake casserole, uncovered, 40 to 45 minutes, or until bubbling and lightly browned.
