This turkey hash recipe is a wonderful combination of turkey meat and potatoes. Throw in some onions and a little butter and you have a great way to get rid of those Thanksgiving Day turkey leftovers.
1/4 cup chopped onion
1/4 cup chopped green pepper
2 tablespoons butter or margarine
2 cups chopped leftover turkey with some skin
1 1/2 cup rich turkey broth made from bones
Salt and pepper to taste
1 1/2 cups leftover dressing
3 cups cubed cooked potatoes
1. Sauté onions and green pepper in butter or margarine for 10 minutes until yellow and transparent.
2. Add remaining ingredients and and mix lightly.
3. Heat thoroughly and serve immediately.
Makes 4 to 6 servings.
