Stuffed peppers are a home cooking classic. Everyone seems to have their own take on this timeless and extremely tasty pepper recipe. Colorful, wholesome, and full of spectacular flavor. Not that hard to make but everyone will think you spent all day in the kitchen. Add a bountiful glass of red and share your bounty with closed friends and loved ones!
1 cup raw sunflower seeds, soaked*
1 cup unsulfered sun-dried tomatoes, soaked*
1/4 cup chopped fresh cilantro
2 tablespoons Mexican seasoning
1 tablespoon unpasteurized miso
1 teaspoon cayenne
1 teaspoon Himalayan salt
1 garlic clove, minced
3 red bell peppers
romaine lettuce leaves
1. Combine the sunflower seeds, sun-dried tomatoes, cilantro, Mexican seasoning, miso, cayenne, salt, and garlic in a food processor. Process until smooth.
2. Slice off the tops of the red bell peppers. Remove the seeds.
3. Stuff the peppers with the sunflower seed mixture. Serve on a bed of romaine lettuce.
Makes 3 servings.
